Sarah Cottin is a Lecturer in Nutrition at the Department of Built Environment and Life Sciences, Abertay University (joined 2017). A biochemist by training, her research bridges fundamental cell biology and human clinical studies, focusing on food components' effects on metabolic and cardiovascular health.

- Cardiometabolic effects of EPA and DHA
- Glycaemic response modulation by food compounds

Her recent publications focus on antiglycative properties of brewer’s spent grain melanoidins and nutrition security applications of edible insects. Collaborations span Zimbabwe, Italy, and Scotland.
