Dr. Sarah L. Booth is a Professor of Biochemical and Molecular Nutrition at the Friedman School of Nutrition Science and Policy at Tufts University. She serves as Director of the Jean Mayer USDA Human Nutrition Research Center on Aging (HNRCA) and leads the Diet & Aging Brain, Sensory Systems directive at the HNRCA. Her research focuses on vitamin K’s roles in human health, including its impact on calcification disorders, kidney disease, and cognitive decline. Dr. Booth pioneered methods for measuring vitamin K in foods and contributes to national nutrient databases. She currently investigates the interplay of vitamins D and K in Alzheimer’s disease and dementia.
Education: Ph.D. in Nutrition from McGill University, Canada
Research Interests: Vitamin K metabolism, fat-soluble vitamins, food composition analysis, brain aging mechanisms, and nutritional interventions for chronic diseases. Her work bridges biochemical research and public health, emphasizing dietary strategies to mitigate age-related health decline.
Awards: 2024 ASN E.V. McCollum Award for Senior Investigators, among multiple recognitions for vitamin K research.
Leadership: Chair of the 2025 Dietary Guidelines Advisory Committee, 2024-2025 President of the American Society of Nutrition, and editorial board member of Annual Reviews of Nutrition. Her research spans clinical, epidemiological, and biochemical studies, with a focus on translating findings into actionable dietary guidelines.
Labs/Teams: Directs the HNRCA’s research programs, leading interdisciplinary teams in nutritional epidemiology and biochemical research. Collaborates with global institutions to advance vitamin and mineral research.
