Rui Zheng is a Post Doctoral Scholar in the Department of Animal Sciences at The Ohio State University. His research focuses on gastrointestinal health, probiotics, and the effects of dietary interventions on neonatal animals, particularly piglets. His work examines the role of microbiota modulation, inflammatory responses, and pathogen inhibition in animal models, with applications to food safety and animal nutrition.
Key research areas include the impact of milk fat globule membrane components on intestinal microbiota, probiotic survival in simulated digestion, and the mechanisms by which probiotics inhibit pathogenic bacteria like E. coli. He also investigates the degradation of mycotoxins like ochratoxin A and the role of long-chain fatty acids in mitigating intestinal barrier damage.
