R. Scott Beyer is an Associate Professor and Extension Specialist in the Department of Animal Sciences and Industry at Kansas State University's College of Agriculture. He holds a 60% teaching, 25% research, and 15% extension appointment, focusing on poultry and companion animal sciences.

Dr. Beyer's research primarily focuses on feed manufacturing and poultry nutrition, with significant contributions to understanding fiber utilization, feed processing effects, and nutrient requirements in poultry production. His work spans companion animal nutrition, gamebird management, and poultry science, with particular emphasis on practical applications for the poultry industry. He has published extensively on topics related to feed formulation, processing techniques, and their impacts on poultry performance and health.
His recent publications demonstrate a strong focus on optimizing feed processing parameters, understanding amino acid composition of various protein sources, and improving gut health in poultry. The research shows consistent attention to practical solutions for poultry producers, with applications in both commercial and small-scale operations.
As an Extension Specialist, Dr. Beyer serves as the Poultry Extension Agent for the state of Kansas, working with poultry producers, 4-H volunteers, and FFA programs. He coaches the KSU Collegiate Poultry Judging team, which won national championships in 2002 and 2003. He is frequently invited to speak at nutrition conferences across the United States and internationally, having presented in Mexico, Tunisia, Egypt, China, Malaysia, South Korea, Indonesia, Australia, Switzerland, Vietnam, Morocco, and the Philippines.
Dr. Beyer teaches nine courses including ASI 106 (Dairy/Poultry Science Lab), ASI 520 (Companion Animal Management), ASI 645 (Poultry Management), and ASI 676 (Avian Nutrition). He mentors approximately 50 undergraduate students and 2 graduate students, and works with students on the annual pullet sale each spring.
