Priya Kathirvel is an Adjunct Professor in the Department of Applied Human Nutrition at Mount Saint Vincent University (MSVU). She holds a PhD in Animal Science from the University of Wisconsin-Madison, a postdoctoral fellowship from Dalhousie University, and prior academic credentials in fisheries science. Her teaching focuses on food science, including courses like Introductory Foods: Plant/Animal Origins and Issues in Food Product Development.
Dr. Kathirvel’s research integrates food chemistry, functional food development, and clinical nutrition. She investigates polyphenol antioxidants, lipid oxidation inhibition, and the health impacts of functional food ingredients. Current projects include collaborations on clinical trials and product development to improve human health through dietary interventions.
She coordinates MSVU’s annual 'Mission Delicious' food product development competition and manages the Food Product Development team for the 'Breakfast and Beyond' program funded by Medavie. Her work bridges academic research with practical applications, emphasizing sensory evaluation and functional ingredient innovation.
