Maria Jesus Periago Caston is a Professor at the University of Murcia's Faculty of Veterinary Medicine, Department of Food Technology, Nutrition, and Bromatology. She holds a PhD in Food Science from the same institution (1993), focusing on enzymatic processing effects on pea flour properties. Her research emphasizes food processing, dietary fiber biochemistry, and the health impacts of bioactive compounds in plant byproducts.
Research Interests: Her work spans carotenoid stability, functional food development, and the nutritional benefits of food waste valorization. Key areas include:
- Optimization of extraction methods for phenolic compounds and carotenoids
- Prebiotic effects of citrus and broccoli byproducts
- Cardiometabolic health effects of polyphenol-rich diets in postmenopausal women
- Antioxidant and antibacterial properties of natural ingredients
Article Trends: Recent studies focus on sustainable utilization of pineapple and tomato byproducts (2024-2025), in vitro fermentation modeling of dietary fibers, and clinical trials evaluating polyphenol impacts on lipid metabolism and oxidative stress markers.
Labs/Teams: Active member of the Nutrition and Bromatology research group at the University of Murcia.
