Nicole Kellow is an Associate Professor in the Department of Nutrition and Dietetics at Monash University, with an adjunct role at the Hudson Institute of Medical Research. She holds advanced credentials as an Advanced Accredited Practising Dietitian and Credentialled Diabetes Educator, with 18+ years of clinical experience in diabetes management across Australia and the UK.

Recent work explores egg consumption's impact on cognition and gut health, dietary patterns in fertility, and cultural perceptions of obesity among Chinese populations. She actively contributes to peer review for journals like Advances in Nutrition and serves on editorial boards.
