Minnamari Edelmann

Minnamari Edelmann is a University Lecturer and Docent at the Department of Food and Nutrition Research, Faculty of Agriculture and Forestry, University of Helsinki. Her research focuses on vitamin fortification (especially B12 and folate), microbial bioprocessing, food matrices, and plant-based food development. She leads projects like the Green Nitrogen Transition and Leg4Life, aiming to enhance food sustainability and nutritional quality. Her work integrates fermentation technology, food chemistry, and sensory science to address challenges in functional food innovation.

Key areas include optimizing vitamin synthesis through Propionibacterium fermentation, reducing anti-nutrients in legume products, and improving texture/flavor of plant-based alternatives. She collaborates on EU-funded initiatives and industry partnerships to translate findings into practical applications.

Edelmann supervises doctoral students in the Doctoral Programme in Sustainable Use of Renewable Natural Resources and Food Chain and Health. Her grants include funding from foundations like the Rikala Foundation and national research councils. She actively participates in international conferences, presenting advancements in vitamin biofortification and microbial applications.
