Minnamari Edelmann is a University Lecturer and Docent at the Department of Food and Nutrition Research, Faculty of Agriculture and Forestry, University of Helsinki. Her research focuses on vitamin fortification (especially B12 and folate), microbial bioprocessing, food matrices, and plant-based food development. She leads projects like the Green Nitrogen Transition and Leg4Life, aiming to enhance food sustainability and nutritional quality.
