Dr. Aliani’s research focuses on the science of functional foods, particularly their development, sensory evaluation, and metabolic impact. His expertise lies in metabolomics using NMR and mass spectrometry to study how bioactive compounds from foods affect human health. He investigates flavour formation in functional foods, especially those containing pulses and wild rice, ensuring consumer acceptability while maintaining therapeutic efficacy. His work bridges food science with clinical nutrition, targeting metabolic and neurodegenerative disorders.
The 15 most recent articles reflect a strong trend in flavouromics, nutritional metabolomics, and functional food innovation. These studies integrate food chemistry with clinical applications, emphasizing biomarker discovery, brain lipidomics, and genomics. Key themes include sensory science, pulse-based product development, and interventions in fetal alcohol spectrum disorders and lung cancer. The interdisciplinary nature spans food technology, biochemistry, neuroscience, and public health.
