Dr. Michael Eskin is a Distinguished Professor in the Department of Food and Human Nutritional Sciences at the University of Manitoba. He holds academic appointments within the Faculty of Agricultural and Food Sciences. His research focuses on edible oils, canola oil, polyphenols, food carbohydrates, and food enzymes, with notable projects addressing polyphenolic compounds in canola/mustard and the role of DHA in fetal alcohol syndrome.
