Dr. Meredith G. Wagner serves as Professor and Chair of the Department of Nutrition, Dietetics, and Exercise Science at Concordia College, concurrently directing graduate and postbaccalaureate education since joining the faculty in 2013. A licensed registered dietitian nutritionist, she pioneered the Combined Dietetic Internship and Master of Science in Nutrition (DI/MS) launched in 2017 and the Accelerated Master of Science in Nutrition beginning in 2025.
Her educational foundation includes:
- Bachelor of Arts in Food, Nutrition, and Dietetics (summa cum laude) from Concordia College
- Combined Dietetic Internship and Master of Science in Nutrition from Kent State University
- Doctorate from North Dakota State University
Research centers on food waste reduction, interprofessional education, and physiological impacts of fruit/vegetable consumption on inflammation and oxidative stress. She teaches core courses including Advanced Nutrition, Environmental Nutrition, and Master’s Capstone, integrating clinical experience from prior roles as a clinical dietitian and foodservice consultant.
Professional recognition includes:
- Fellow of the Academy of Nutrition and Dietetics
As program director, she oversees curriculum development for DI/MS and Accelerated MS pathways while managing departmental operations. Her teaching portfolio spans undergraduate nutrition science and graduate clinical practice courses, with recent focus on launching the 2025 accelerated degree program. Professional certifications include ServSafe Food Protection Manager/Instructor and Entrepreneurial Mindset Facilitator credentials.
