Martin Wiedmann is the Gellert Family Professor in Food Safety at Cornell University's Department of Food Science within the College of Agriculture and Life Sciences (CALS). His expertise spans food microbiology, microbial pathogenesis, and zoonotic diseases, with a focus on Listeria monocytogenes and Salmonella. He co-directs the New York State Integrated Food Safety Center of Excellence and leads interdisciplinary research addressing foodborne disease prevention through farm-to-table approaches.
Wiedmann holds a DVM equivalent from the University of Munich (1994) and a Ph.D. in Food Science from Cornell (1997). His research integrates genomics, epidemiology, and modeling to understand bacterial survival, evolution, and transmission. Key areas include microbial ecology, spoilage mechanisms, and risk assessment in dairy, produce, and meat systems.
His extension programs focus on dairy microbiology and food safety training, supported by industry partnerships. He teaches courses emphasizing critical thinking and active learning, including FDSC 9900: Doctoral-Level Thesis Research. Awards include AAAS Fellowship (2018) and the IDFA Food Safety Leadership Award (2017).
Recent work includes agent-based models for pandemic control in food systems, investigations into milk spoilage microbiology, and genomic studies of pathogen evolution. He collaborates globally on improving food safety practices and reducing foodborne disease outbreaks.
