Mario M. Martinez is an Associate Professor and Sapere Aude Research Leader at the Department of Food Science, Aarhus University. His research focuses on translational glycoscience, investigating the structure-function relationships of food polysaccharides, their interactions with plant secondary metabolites, and applications in plant-based food structuring technologies (e.g., extrusion processing) and biodegradable packaging solutions.
