Keith Underwood

Keith Underwood is an Associate Professor in the Department of Animal Science at South Dakota State University. He holds a Ph.D. and M.S. in Animal and Veterinary Sciences from the University of Wyoming and a B.S. in Animal Science from Texas Tech University.

His academic interests focus on meat science, including meat safety, value-added meat products, and animal growth and development. He teaches courses such as AS 200 Intro to Meat Evaluation, AS 445/L Value Added Meat Products, AS 450 Meat Safety and HACCP, and AS 750 Animal Growth and Development.

• Professional Memberships: American Meat Science Association (AMSA), American Society of Animal Science (ASAS), American Association of Meat Processors (AAMP), and South Dakota Association of Meat Processors.

Awards include the Distinguished Service Award from the South Dakota Beef Industry Council and recognition in the 40 Under 40 in Agriculture by Vance Publishing. His work emphasizes advancing meat science and industry practices through education and research.
