Professor Jürgen Wendland is a leading researcher in yeast genetics and microbiology at Hochschule Geisenheim University, where he serves as head of the Professorship for Microbiology and Biochemistry within the Institute of Microbiology and Biochemistry. With over two decades of research experience, his work bridges fundamental yeast biology with practical applications in food and beverage production.
His research primarily focuses on yeast genetics, mycoparasitism in predator yeasts, and fermentation science. His laboratory investigates the molecular mechanisms behind the unique predatory behavior of Saccharomycopsis yeasts, which under starvation conditions develop the ability to attack and consume other fungi.
