Jenny Jackson, PhD, MS, RDN, CHWC is a Clinical Associate Professor of Nutrition at Oregon State University and Director of the OSU Dietetic Internship Programs. She holds a PhD in Public Health, with prior roles including postdoctoral research in nutritional epidemiology and work at the Oregon Dairy and Nutrition Council. Her affiliations include the Moore Family Center for Whole Grain Foods, Nutrition and Preventive Health and the OSU Policy Analysis Laboratory (OPAL).
Her research focuses on community-based investigations of food security, healthy eating, and physical activity across populations, including rural Oregon communities, older adults, and people living with HIV. Notable projects address food insecurity among U.S. college students and the development of environmental assessment tools for health behavior studies.
Jenny has been recognized with the 2015 OSU Student Leader Award for contributions to students and the community. She oversees experiential learning initiatives for nutrition students and advocates for hands-on education. Her career integrates teaching, research, and public health advocacy to address systemic health challenges.
