Ivana Flanjak is a Full Professor at the Department of Food and Nutrition Research, University of Osijek, Croatia. Her academic career spans multiple areas of food science with a strong emphasis on analytical methods development and food quality assessment.
Her research interests include:
- Food chemistry and technology, particularly related to cocoa, honey, and bee products
- Development and validation of analytical methods for food quality control
- Characterization of bioactive compounds in food matrices
- Valorization of food industry by-products
- Authentication of food products, particularly honey and other bee products
Dr. Flanjak's recent publications demonstrate a strong focus on sustainable food systems, with particular attention to utilizing food waste streams like cocoa shells to create nutritionally improved products. She has conducted extensive research on bee products including honey, royal jelly, and bee pollen, developing methods to authenticate their botanical origin and assess quality parameters. Her work on traditional apple varieties highlights her interest in preserving agricultural biodiversity while improving food quality.
She has supervised doctoral students including Mario Nosić (defending August 26, 2025) and Esma Karahmet Farhat (defending July 18, 2025).
