Ivan Vnučec serves as Assistant Professor at the Department of Animal Science and Technology, Division for Animal Sciences, Faculty of Agriculture, University of Zagreb. His office is located in the 2nd pavilion, 2nd floor, room 053, with contact via +385 1 239 4036 or ivnucec@agr.hr. Fluent in Croatian and English, he teaches 14 specialized courses including Sheep Breeding Systems, Meat Quality, and Livestock Production Environment.
His academic qualifications include:
- Ph.D. (2004-2011): Carcass characteristics and meat quality of lambs from diverse production systems
- B.Sc. (1997-2003): Cage rearing of young hens on farm 'Agrokoka' Hrvatski Leskovac
Professor Vnučec's research centers on sustainable sheep and goat production with emphasis on conservation of Croatian local breeds like Pag and Istrian sheep. His work investigates genetic-phenotypic relationships in meat quality, reproductive management systems, and valorization of traditional production methods. He bridges fundamental animal science with practical applications for preserving indigenous genetic resources while enhancing product quality.
His 2007-2016 publications reveal consistent focus on meat science and breed-specific characteristics, particularly analyzing chemical composition, carcass traits, and production systems of Croatian sheep breeds. Key trends include sex-based differences in meat quality, volatile compound profiling of traditional products, and alternative feed impacts on lamb growth. His research demonstrates strong integration of genetic characterization with practical meat quality assessment.
Professor Vnučec coordinates multiple research initiatives funded by MZOS, University of Zagreb, and European Social Fund:
- Genetic and phenotypic characterization of Croatian sheep breeds (MZOS 2007-2013)
- Protected designation of origin for Croatian meat products (MZOS 2007-2013)
- Improvement of practical training in agricultural studies (ESF 2020-2023)
- Genotype-phenotype-technology harmonization projects (University of Zagreb 2014-2017)
