Dr. Dong’s research focuses on dietary interventions—particularly vitamin D, probiotics, prebiotics, and fibre—and their impact on immune function, appetite, weight management, cardiometabolic risks, and bone and mental health in young adults and across ethnic groups. Her current work investigates vitamin D status and glycemic response in ethnic minorities in East London, supported by a Barts Charity grant. She has led and contributed to multiple randomized controlled trials examining postprandial responses, immune function, and nutritional status.
Her recent publications center on glycemic response, vitamin D deficiency, and immune modulation, with a strong emphasis on ethnic disparities and clinical nutrition. These works reflect trends in nutritional epidemiology, metabolic health, and public health interventions.
