Eun Joo Lee

Dr. Eun Joo Lee is a Professor and Program Director of the Food Science and Technology (FST) program at the University of Wisconsin-Stout, affiliated with the College of Arts & Human Sciences and the Kinesiology, Health, Food & Nutritional Sciences Department. She holds a Ph.D. in Food Science and Technology from Korea University (2001) and completed postdoctoral work at Iowa State University (2001-2011).

Dr. Lee's research focuses on food chemistry, particularly bioactive peptides from egg proteins and mechanisms of quality changes in irradiated meats. She has published over 65 peer-reviewed papers and 12 book chapters, secured $0.6M in research grants, and is preparing for plant-based meat alternatives using 3D-food printing technology. Her recent work explores interdisciplinary intersections of food chemistry with pediatric nutrition and dental applications.

Her Google Scholar publications (2005-2022) demonstrate expertise in meat irradiation safety, bioactive food components, and infant nutritional needs, with trends showing increasing emphasis on sustainable food technologies and functional food development. She actively collaborates on food packaging innovations and clinical nutritional studies.
