Elizabeth Fragkopoulou is an Associate Professor at Harokopio University's Department of Nutrition and Dietetics. Her research focuses on bioactive components in natural products and their effects on human health, particularly investigating anti-inflammatory, anti-thrombotic, and anti-oxidant mechanisms. She holds a PhD in Biochemistry from the National and Kapodistrian University of Athens and a postdoctoral fellowship from Harokopio University.
Her research interests include lipid biochemistry, isolation of food micro-constituents, and clinical studies on food bioactivity. Key areas of exploration involve platelet activating factor metabolism and the effects of natural products on cardiovascular health. Recent work examines grape pomace extracts, plant-based dietary supplements, and wine's postprandial effects on platelet function.
Dr. Fragkopoulou has published extensively in peer-reviewed journals, with notable contributions in Food & Function, Prostaglandins Leukot Essent Fatty Acids, and British Journal of Nutrition. Her studies combine in vitro experiments with clinical trials to evaluate natural compounds' biological activity. She is actively involved in teaching and research supervision within the Department of Nutrition and Dietetics.
