Yanni Amalia is an Assistant Professor of Food Chemistry at the Department of Nutrition and Dietetics, Harokopio University of Athens. She specializes in food components, functional food design, and the nutritional value of Greek foods. Her work includes studying bioactive compounds, food processing effects, and metabolic health outcomes. She holds a BSc in Chemistry (Aristotle University, 1996), a PhD in Medicine (National and Kapodistrian University of Athens, 2002), and a postdoc in Nutrition (Harokopio University, 2008).
Research focuses on functional foods, glycemic response modulation, probiotic applications, and antioxidant properties of natural ingredients. Key areas include the design of foods with targeted health benefits, such as improved blood sugar control and gut microbiome regulation. Recent studies involve oat flakes with probiotics for diabetes models and the bioactivity of Corinthian currants in metabolic health.
Her lab (Laboratory A’, Central Building) explores food chemistry applications in nutrition, with publications spanning food structure, microbiome interactions, and dietary interventions. No specific awards are listed, but her work contributes to advancing functional food science and metabolic health strategies.
