Dr. Elad Tako is an Associate Professor in the Department of Food Science at Cornell University's College of Agriculture and Life Sciences (CALS). He holds a Ph.D. (2005), M.Sc. (2001), and B.Sc. (1998) from The Hebrew University of Jerusalem. His research focuses on linking food science and nutrition to understand how diet and physiological status impact intestinal functionality, morphology, and the microbiome. Key areas include trace mineral bioavailability (zinc, iron), nutrigenomics, and dietary interventions using waste-derived ingredients like grape pomace and brewers' grains.
He leads the Trace Minerals and Nutrition Lab, emphasizing training future scientists and public outreach. Recent work explores upcycled food byproducts for poultry feed to improve gut health and reduce costs. His lab employs avian models (Gallus gallus), including in ovo administration techniques, to study nutrient absorption and microbiome interactions. He has published over 50 peer-reviewed articles since 2019, focusing on dietary interventions for gut health, biomarker development (e.g., LA:DGLA ratio for zinc status), and systematic reviews on biofortified crops and nanoparticles' effects.
