Eibhlis O'Connor is a registered human nutritionist and Lecturer in the Department of Biological Sciences at the University of Limerick. She holds a BSc and PhD in Nutritional Sciences from University College Cork (UCC). Her post-doctoral work included clinical trial coordination for Crohn's disease patients (focused on bone health) and project management on the ELDERMET project with UCC's School of Microbiology and Alimentary Pharmabiotic Centre (APC).

Research Interests: Investigates vitamin K-dependent proteins in health/disease, particularly in bone metabolism, cognition, glucose regulation, and cardiovascular health. Collaborates with the APC to study dietary impacts on gut microbiota and health outcomes in specific populations.
Affiliations: Funded Investigator at APC Microbiome Ireland. Based at the Biosciences Building, University College Cork, Ireland.
