Eftychia Pinakoulaki is an Associate Professor at the Department of Chemistry, University of Cyprus, within the School of Natural and Applied Sciences. Her academic journey includes a Diploma in Chemistry (1998) and PhD in Chemistry (2002) from the University of Crete, followed by postdoctoral work as an EMBO Long-term Fellow at Johann Wolfgang Goethe University, Germany (2003–2004) and the University of Crete (2004–2006). She joined the University of Cyprus as a Lecturer (2007–2012), progressed to Assistant Professor (2012–2018), and has been Associate Professor since 2018.
Her research focuses on Biophysics and Bioanalytical Chemistry, employing advanced spectroscopic techniques like FTIR, time-resolved step-scan FTIR, and resonance Raman spectroscopy combined with HPLC. Key areas include:
- Protein dynamics in heme sensors (e.g., HemAT) and oxidases
- Nitrite/NO coordination mechanisms in myoglobin and peroxidases
- Food chemistry applications (carob antioxidant properties, structural analysis)
- Biosurfactant production from microbial strains
Publications (2015–2023) demonstrate a strong emphasis on spectroscopic elucidation of protein-ligand interactions and food-component dynamics. Recent work explores thermal effects on biomolecules, carob's functional properties, and environmental microbiology.
Awards & Honors:
- EMBO Long-term Fellowship (2003–2004)
