Dr. Deepti Salvi serves as Associate Department Head of Food Engineering in the Department of Food Science at North Carolina State University's College of Agriculture and Life Sciences. She maintains an active research laboratory focused on innovative food processing technologies, particularly cold atmospheric pressure plasma applications for food safety and quality.
Her educational background includes a Ph.D. in Biological and Agricultural Engineering from Louisiana State University (2008), an M.E. in Food Engineering and Bioprocess Technology from Asian Institute of Technology, Thailand (2005), and a B.Tech. in Agricultural Engineering from Dr. B. S. Konkan Agriculture University, India (2003).
Dr. Salvi's research interests center on food processing techniques including cold atmospheric pressure plasma, high pressure processing, microwave processing, extrusion, and ultraviolet processing to ensure food safety and quality. She investigates the role of physical properties of food to control excessive caloric intake and enhance nutrient absorption in the human gastrointestinal tract, and conducts numerical modeling of transport phenomena in biological and food engineering systems.
Her recent publications reveal a strong emphasis on plasma-activated water applications across various food matrices, UV-C treatments for powder decontamination, and electrode design optimization for more efficient plasma systems. Her work spans both fundamental research on mechanisms of action and practical applications for industry implementation.
Dr. Salvi has secured numerous research grants as Principal Investigator from USDA, NSF (through CAPPS), and industry partners including the American Egg Board. Her current projects focus on next-generation plasma solutions for food safety, UV-C technology for powdered foods, and development of ready-to-eat healthy snacks through extrusion.
She actively mentors graduate and undergraduate students, with current lab members including post-doctoral researchers, Ph.D. candidates, M.S. students, and undergraduate researchers. Her laboratory maintains strong collaborations with researchers across multiple disciplines including microbiology, electrical engineering, and packaging science.
