Coral Kent-Dennis is an Assistant Professor in the Department of Animal and Food Sciences at the University of Kentucky (Martin-Gatton College of Agriculture, Food and Environment). Her research focuses on ruminant physiology, immune responses in livestock, and the application of novel feed ingredients in animal nutrition.
Her recent work explores the endocannabinoid system in bovine tissues, immunomodulatory effects of cannabidiol, and impacts of ergot alkaloids on ovine vasculature. She also co-authored a review on industrial hemp by-products in livestock rations.
