Claudia Narvaez is a Professor in the Department of Food and Human Nutritional Sciences at the University of Manitoba's Faculty of Agricultural and Food Sciences. Her work focuses on mitigating foodborne pathogens, antimicrobial resistance, and biocontrol methods in food processing environments.
- Doctor in Veterinary Medicine, Zulia State University, Venezuela
- MSc in Microbiology, Zulia State University, Venezuela
- PhD in Animal and Food Sciences, Texas Tech University, US
Research Interests: Specializing in food safety and microbiology, her research includes:
- Development of strategies to reduce Shiga Toxigenic E. coli, Salmonella, and Listeria monocytogenes in food systems
- Investigation of antimicrobial resistance across the food continuum
- Use of bacteriophages for biopreservation
- Improving microbiological quality of packaged ice and processing environments
Teaching: Courses include Food Microbiology (FOOD 4150), Food Product Development (FOOD 4510/HNSC 4280), and Food Science Seminar (FOOD 7130).
