Professor Christine Henriksen is affiliated with the University of Oslo (since 2024) and the Faculty of Medicine, where she leads clinical nutrition research. She has held previous roles at Bjørknes University College and Atlantis Medical College, and collaborates with Oslo University Hospital, Akershus University Hospital, and Norwegian Sports Academy.

Recent publications examine plant-based diets in colorectal cancer recovery, low-carbohydrate diets for obesity, and micronutrient status in intestinal failure. She developed validation studies for nutritional tools like BIA and PG-SGA, and contributes to Nordic Nutrition Recommendations through scoping reviews on minerals.
Henriksen teaches courses including ERN1010 Introduction to Clinical Nutrition and ERN4410 Master's course in clinical nutrition. Her work spans collaborations with hospitals and implementation studies on nutritional support systems like MyFood.
