Celia Carrillo Perez

Celia Carrillo Perez is an Associate Professor at the University of Burgos, affiliated with the Faculty of Sciences and the Department of Biotechnology and Food Science. Her primary research focus is in Nutrition and Food Science, particularly the role of dietary fatty acids in health.

Her research group, "NUTRICION Nutrition and Dietetics," emphasizes the biochemical and nutritional impacts of food components. She earned her PhD under the supervision of Dr. Sara Raquel Alonso de la Torre and Dr. María del Mar Cavia Camarero, with a thesis titled "Effect of Oleic Acid, a Monounsaturated Fatty Acid from the Omega-9 Family."
