Casimir C. Akoh serves as a Distinguished Research Professor in the University of Georgia's College of Agricultural & Environmental Sciences within the Department of Food Science & Technology. With over 25 years of experience, he leads the Lipid Biotechnology, Chemistry, and Phytochemicals Laboratory, focusing on chemical/enzymatic lipid modification and antioxidant-rich phytochemical isolation.
- Teaches graduate courses: FDST 6500/8500 (Graduate Seminars), FDST 8010 (Food Lipids), and FDST 8100 (Food Carbohydrates)
- Maintains active research on structured lipids for infant formula, trans-free margarines, nutraceuticals, and food-grade antioxidant systems
His laboratory develops structured triacylglycerols with controlled fatty acid positioning using immobilized lipases, creating fat analogs for medical foods and functional ingredients. Current methodologies focus on solvent-free enzymatic systems and nonconventional processing techniques like ultrasound-assisted synthesis.
Recent publications emphasize phytochemical antioxidant applications in marine oil stabilization, cocoa butter equivalents from tropical fats, and green lipid modification technologies. The work demonstrates strong industrial relevance through patented structured lipid formulations and food product development.
While no specific student names appear in the data, his research group maintains active collaboration with PhD candidates and postdoctoral researchers in lipid biotechnology. The lab operates within UGA's state-of-the-art Food Science facilities, combining analytical chemistry with applied food engineering.
