Dr. Beth Forrest is a Professor of Liberal Arts Education at the Metropolitan College, Boston University. She holds a PhD in History from Boston University, along with MA and BA degrees from the same institution. Her professional roles include serving as a James Beard Award Judge, Assistant Director of Programs in Food and Wine at Boston University, and Lecturer at Metropolitan College. She has also held positions at the Open Universitat Oberta de Catalunya and The Cambridge School of Culinary Arts.
Her research focuses on the intersection of food with cultural history, sensory studies, and medieval traditions. Notable works include co-editing Food in Memory and Imagination: Space, Place and Taste (2022) and Introduction to Gastronomy (2015). She has led initiatives such as the "Circus of the Senses" symposium and secured grants including the Andrew W. Mellon Foundation award (2023) for exploring food, race, and humanities.
