Professor McCoy specializes in economic history with a concentrated focus on the New Deal era's impact on national and state park development. His research integrates archival analysis with virtual reality technology through the LivingNewDeal.org project "A Legacy of Recreation: The New Deal’s Development of National and State Parks," creating immersive educational experiences about historical infrastructure projects. Additional research areas include the history of economic thought and development economics, particularly examining policy legacies in public recreation spaces.
He teaches undergraduate courses including Principles of Economics, Economics of the Public Sector, History of Economic Thought, Economics of Development, and Economic History. His curriculum features experiential projects analyzing New Deal impacts across multiple parks such as Redwood National and State Parks, Pinnacles National Park, Saguaro National Park, and California state parks including Mt San Jacinto and Palomar Mountain.
