Ashwini R Wagle is a Professor and Department Chairperson in the Department of Nutrition, Food Science and Packaging at San José State University (SJSU). She holds an Ed.D in Educational Leadership from the University of New England and an MS in Nutrition from Indiana University of Pennsylvania. Her expertise spans clinical dietetics, multicultural nutrition, and foodservice systems.
Dr. Wagle's research focuses on the intersection of food, culture, and health, particularly addressing nutritional challenges among South Asian populations, including diabetes and cardiovascular disease risks. She is the author of Carbohydrate Counting: Traditional South Asian Food Lists, a widely used resource in healthcare globally. Her work also addresses food insecurity, hunger, and cultural competency in dining experiences.
- Awards: Fellow of the Academy of Nutrition and Dietetics (2022), Excellence in Research Award (2025), Excellence in Education Award (2016–2017).
