Dr. Alex Griffiths is a Senior Lecturer in Nutrition at the School of Health, Leeds Beckett University. He completed his PhD at the Carnegie School of Sport (Leeds Beckett University), focusing on nutritional strategies to mitigate hypoxia-induced performance decline and body mass loss in high-altitude environments.

His research spans two primary domains: sport performance optimization and population health. For athletes, he investigates:
- Breakfast consumption and carbohydrate supplementation effects on substrate oxidation
- Gastrointestinal permeability/damage during intense exercise
- Applications for high-altitude mountaineers, military personnel, and athletes
In public health, current projects include:
- Mediterranean diet impacts on blood pressure, gut microbiota, and healthy ageing
- Collaborative work with Public Health England on obesity-COVID-19 mortality correlations
