Athanasios C. Pappas serves as an Associate Professor in the Department of Nutritional Physiology and Feeding at the Agricultural University of Athens, Greece. His educational qualifications include: BSc in Agricultural Sciences, Agricultural University of Athens (2002) PhD in Poultry Nutrition, University of Glasgow (2006) Dr. Pappas' research centers on poultry antioxidant systems, trace element metabolism (particularly selenium), and circular economy applications for food waste in animal diets. Key investigations address antioxidant-pro-oxidant balance, maternal nutrition impacts on offspring development, mycotoxin mitigation, and elemental fingerprinting for food authentication. His work bridges fundamental nutritional physiology with practical agricultural sustainability challenges.
