Marie Paulsson is a Professor in the Division of Food and Pharma at the Faculty of Engineering (LTH), Lund University. She is an active member of the LTH Profile Area: Food and Bio and leads research and education in dairy technology and processing. Her work is supported by major industry partners including Arla Foods, Tetra Pak, and Skånemejerier, as well as national and international research grants. Her research interests lie at the intersection of food science, engineering, and nutrition, with a focus on dairy technology, milk genomics, nutritional and bioactive components of milk, protein functionality, and thermal processing . She investigates how processing affects the physicochemical and nutritional properties of milk and dairy products, aiming to improve quality, functionality, and sustainability. Her recent publications (2024) demonstrate a strong trend in analyzing industrial-scale thermal processing of milk and cream, including impacts on vitamins, protein structure, coagulation properties, and storage stability. These studies often involve pilot-scale experiments and collaborations with key researchers such as M. Glantz and F. Lewerentz. She is actively involved in advising graduate students, having served as assistant supervisor on a Ph.D. project related to non-coagulating milk in Swedish Red cattle. Her research is funded by both industrial partnerships and competitive grants, emphasizing applied and translational outcomes in the dairy sector. The Dairy Group she is part of participates in major networks such as the International Dairy Federation (IDF) and Mejeritekniskt Forum , reflecting strong national and international academic and industrial collaborations. The group also contributes to UN Sustainable Development Goals, particularly in sustainable food production and responsible resource use.
