Dr. Tamara Bucher is an Associate Professor at the University of Newcastle, affiliated with the School of Environmental and Life Sciences. Her research focuses on consumer behavior, nudging strategies to improve food choices, and the impact of digital environments on dietary habits. She holds a PhD in Food, Nutrition, and Health from ETH Zurich and has extensive interdisciplinary collaborations in nutrition, psychology, and computer science. Dr. Bucher leads the University’s Doctoral Training Centre in Food and Agribusiness, bridging academic research with industry needs. She also serves as Deputy Director of the Newcastle Wine Studies Network, exploring consumer perceptions of wine and low-alcohol beverages. Her work emphasizes creating sustainable and accessible healthy food environments, including studies on convenience foods, online grocery shopping, and portion size education. Key achievements include developing the International Food Unit (IFU) to improve portion size estimation and co-authoring influential reviews on positional influences in food choice. She has received the 2013 Nutrition Society Paper of the Month award and supervises Dual Award Doctoral students with international partner universities. Her teaching roles include coordinating courses on Functional Foods, Micronutrients, and Food and Consumer Behavior. Current projects investigate digital nudging in online food platforms and the role of nature imagery in food marketing.
