Prof. Claudia FOLLI is an Associate Professor in the Department of Biochemistry and Molecular Biology at the University of Parma. Her research focuses on protein structural biology, retinoid transport mechanisms, amyloidosis, food allergens, and bacterial toxin-antitoxin systems. She holds a PhD in Molecular Biotechnology from the Catholic University of the Sacred Heart (2001) and has been conducting post-doctoral and faculty-level research since 2000. She teaches Biochemistry courses in Food Science and Technology programs, including 'Applied Biochemistry' for graduate students and 'BIOCHEMISTRY' for undergraduate programs in Food Science and Livestock Production. Her research has elucidated structural properties of transthyretin and its amyloidogenic variants, characterized allergenic proteins like peach lipid transfer protein (Pru p 3) and insect-derived arginine kinase, and explored uric acid degradation pathways. She has also studied bacterial conjugation regulation in enterococci and toxin-antitoxin systems in probiotic Lactobacillus strains. Her work bridges fundamental biochemistry with food safety and medical applications. Recent studies include investigations into edible insect allergens, membrane-active peptides, and small molecule inhibitors of transthyretin amyloidogenesis. She collaborates on structural studies using X-ray crystallography, molecular docking, and immunological assays.
