Åsa Håkansson is an Associate Professor and Senior Lecturer at Lund University's Faculty of Engineering, specifically within the Division of Food and Pharma as part of the LTH Profile Area: Food and Bio. Her research focuses on the critical interface between nutrition, immunology, and microbiology, with human health as the central point of intersection. The gastrointestinal tract serves as her primary research domain, where she investigates how dietary factors interact with commensal bacteria to guide immune functions. Her primary research interests include: Nutrition and its impact on gut health Immunology of the gastrointestinal tract Microbiome composition and function Probiotics and their health effects Food safety and microbial interactions Dr. Håkansson's recent work has evaluated the immunological, physiological, and microbiological outcomes of food supplements through animal models and clinical trials. Her fingerprint reveals significant activity in inflammation research (100%), probiotics (86%), Lactobacillus studies (74%), Escherichia coli interactions (74%), vegetable food science (73%), bacterial microbiology (71%), processed meat safety (70%), and mouse model research (70%). Her recent publications demonstrate a clear trend toward developing and evaluating fermented foods and plant-based alternatives for gut health. Key themes include probiotic potential in fermented teas, safety and efficacy of non-dairy alternatives, and clinical applications of probiotics for autoimmune conditions like celiac disease and inflammatory bowel disease. Dr. Håkansson leads multiple significant research projects: "Stärkt tarmslemhinna och ökat järnupptag hos IBD-patienter vid intyg av växtbaserade livsmedel" (2024-2026), funded by Dr P Håkanssons Stiftelse "Intervention study to determine health effects of fermented non-dairy yoghurt" (2024-2025), funded by The Green Dairy Sweden Holding AB "Blood microbiome engineering for targeted treatment and prevention" (2024), funded by Dir Albert Påhlssons stiftelse FORCE - Center for Food Resilience and Competitiveness (2024-2028) She currently serves as primary supervisor for a PhD project investigating plant-based foods' impact on microbiota composition and gut health (2024-2028), with Johan Purhagen as secondary supervisor. Her research contributes directly to UN Sustainable Development Goals related to health, well-being, and responsible consumption.
