Vera Mazurak is a Professor in the Department of Agricultural, Food and Nutritional Science at the University of Alberta, affiliated with the Faculty of Agricultural, Life and Environmental Sciences. She holds a PhD in Nutrition and Metabolism from the University of Alberta (2003). Her research focuses on lipid metabolism in disease, particularly cancer-related malnutrition, and the role of essential fatty acids in cancer progression. She investigates nutritional strategies to mitigate chemotherapy-induced cachexia and explores how nutrients influence gene expression linked to cancer invasiveness.
Teaching responsibilities include courses such as Nutrition and Metabolism Related to Cancer (AFNS 524/ONCOL 424/524), Nutrition Across the Lifespan (AFNS 556/NU FS 356), and Research Methods in Nutritional Science (NUTR 400). She supervises directed research projects (AFNS 900) for course-based master’s students. Recent terms taught include Fall 2025 and Winter 2026.
Research interests span cancer nutrition, metabolic pathways in disease, and translational studies linking fatty acid profiles to clinical outcomes. Her work emphasizes practical interventions to improve patient quality of life during cancer treatment. She has contributed to studies on fish oil supplementation efficacy in lung cancer and the role of adipose tissue in cancer survival.
Publications highlight her expertise in cancer cachexia, body composition analysis, and nutritional strategies for oncology patients. She collaborates with interdisciplinary teams in the Faculty of Medicine and Dentistry and the Department of Oncology.
