Professor Teresa T. Fung holds the Ruby Winslow Linn Endowed Professorship in Nutrition at Simmons University, where she also serves as Director of the Didactic Program in Dietetics and Co-Chair of the Nutrition Department. She teaches courses in Nutrient Metabolism, Dietetics Profession, and Nutritional Epidemiology, emphasizing practical skills and critical thinking for evolving professional environments.
Her education includes a BS and MS from Cornell University, a dietetic internship at Yale-New Haven Hospital, and a ScD in Nutrition and Epidemiology from Harvard University’s T.H. Chan School of Public Health. She is a Registered Dietitian (RD) and maintains an adjunct role at Harvard’s School of Public Health.
Her research focuses on diet’s role in preventing chronic diseases like diabetes, cancer, and cardiovascular issues, with particular emphasis on frailty prevention in aging populations. Current projects examine processed food impacts on elderly health and global diet quality indices. She collaborates with NIH-funded initiatives and contributes to national Dietary Guidelines through her role on the 2025 Advisory Committee.
Awardees include the 2022 Monsen Award from the Academy of Nutrition and Dietetics and the 2018 Toby Sloane Award for student-centered teaching. She serves on editorial boards for leading journals and advises the U.S. News & World Report’s diet rankings.
Her work bridges clinical and academic realms, advocating for early professional credentialing before pursuing advanced degrees. Research often involves student collaboration, as seen in published studies on pregnancy nutrition behaviors and breast cancer diet associations.
