Stephen On is a Professor at the Department of Wine Food & Molecular Biosciences within Lincoln University's Agriculture and Life Sciences Faculty. With over 30 years of research experience, his work focuses on microbiological food safety and microbial aspects of winemaking, leveraging diagnostic methods and bacterial taxonomy. He contributes to public health (disease diagnostics, outbreak control) and wine improvement (microbial characterization) while serving on the Executive Board of the International Committee on Systematics of Prokaryotes and the New Zealand Microbiological Society.

His research spans foodborne pathogens (Campylobacter, Arcobacter, Helicobacter), antibiotic resistance in agricultural systems, comparative genomics, and winemaking yeast characterization.
