Stephen B. Smith is a Professor of Meat Science in the Department of Animal Science at Texas A&M University, with joint appointments in Food Science and Nutrition. His research focuses on adipose tissue development in livestock, lipid metabolism in bovine muscle, and meat quality attributes. Dr. Smith teaches courses in meat science, nutrition, and physiological nutrition, and has received national recognition including the American Society of Animal Science Southern Section Outstanding Young Animal Scientist Award and Animal Growth and Development Award.
His research explores metabolic regulation of intramuscular fat development, fatty acid composition effects on sensory attributes, and nutritional impacts on cardiovascular health. Current investigations examine vitamin D's role in muscle development and choline supplementation effects on muscle mass in aging populations. Dr. Smith maintains professional memberships in the American Society for Nutrition, American Meat Science Association, and American Society of Animal Science.
