Simone Guglielmetti is a Full Professor of Food Microbiology at the University of Milano-Bicocca's Department of Biotechnology and Biosciences, where he leads the μbEat lab focused on probiotics and microbial biotechnology. His research bridges fundamental microbiology and industrial applications, with expertise in gut microbiome modulation, microbial adhesion, and immunomodulation.
Research interests center on:
- Microbe-host interactions: Immunomodulatory properties of bifidobacteria/lactic acid bacteria and molecular determinants of bacterial adhesion
