Sarah Comstock is an Associate Professor in the Department of Food Science and Human Nutrition at Michigan State University's College of Agriculture & Natural Resources. Her research investigates the critical relationships between nutrition, gut microbiota, and immune development, with a special emphasis on maternal and child health outcomes. She actively contributes to academic instruction and leads NIH-funded research initiatives aimed at reducing gastrointestinal disease through nutritional interventions.
Dr. Comstock's educational foundation includes:

Her research program centers on how early nutrition shapes immune system development in the gut, particularly examining maternal obesity's impact on child growth, lipid roles in child health, and microbiota influences on food allergies. Using both animal models and human cohorts, she identifies targets for nutritional strategies that promote gastrointestinal health and prevent disease. A key objective is discovering immune or microbial targets for interventions to reduce gastrointestinal disorders.
Recent publications (2023-2025) demonstrate a strong focus on gut microbiome dynamics in maternal-child health, including prenatal diet effects, maternal obesity consequences, and breastfeeding impacts on infant microbiota. Much of this work occurs within the NIH ECHO Program, which studies environmental influences on child health. She also examines dietary interventions like whole grains for their effects on gut inflammation and microbial communities.

She mentors diverse trainees including undergraduates, graduate students, and veterinary researchers.
