Associate Professor Sara Grafenauer is a Program Lead in Nutrition & Dietetics at the University of New South Wales (UNSW). Her academic roles include serving as a Board Director for the Global Whole Grain Initiative and Oat Australia, and membership on the CSIRO Future Protein Advisory Board. Her research focuses on dietary patterns, food production systems, and the nutritional implications of dietary choices on chronic disease risk. Grafenauer holds a PhD in nutritional science and has supervised research on weight loss interventions and dietary change. She is a Fellow of Dietitians Australia and actively contributes to nutrition policy through roles like her involvement with the Health Star Rating System.
Her research interests span dietary fiber, food reformulation, and the economic impacts of whole grain consumption. Grafenauer’s publications emphasize translating nutritional science into public health outcomes, including studies on ultra-processed foods, legume consumption benefits, and the role of campus food gardens in improving food literacy. She has authored over 50 journal articles and book chapters, with a focus on bridging gaps between academic research and real-world applications in nutrition policy and clinical practice.
