Sandra Budžaki

Dr. Sandra Budžaki is a Full Professor at the Department of Process Engineering, Faculty of Food Technology Osijek, Josip Juraj Strossmayer University of Osijek. She specializes in heat and mass transfer phenomena during food processing, waste valorization in the agri-food industry, and enzymatic biodiesel production.

Her research focuses on:

• Enzyme immobilization on agro-food waste-derived carriers

• Thermal property characterization of food matrices

Recent work highlights biocatalytic innovations using eggshell membranes and spent coffee grounds for sustainable lipid engineering and biofuel production. She has contributed to optimizing enzymatic biodiesel processes in micro-flow reactors and analyzing waste stream valorization potential.
