Roman Lang

Roman Lang is a Senior Researcher at the Leibniz Institute for Food Systems Biology at the Technical University of Munich (TUM). He leads the Research Group Food Biopolymer Chemistry and serves as Head of the Subunit Analytical Technologies - LC-MS. His work focuses on dietary bioactives, sensory chemistry, and human metabolism.

• 2007–2020: Research Fellow under Prof. T. Hofmann at TUM

Lang's research investigates non-volatile food bioactives, their sensory properties, receptor interactions, and metabolic fate post-consumption. He employs UPLC-MS methods for compound identification and quantification in biological matrices.
