Ramón Mira de Orduna Heidinger is a Lecturer at ETH Zurich's Department of Health Sciences and Technology. After 20 years as a university professor in Canada, the USA, and Switzerland, he currently leads the Oenology Department at the State Viticulture and Oenology Institute in Freiburg im Breisgau, Germany. He holds a PhD and has extensive academic experience across multiple institutions.
His research focuses on improving wine quality through sustainable oenological fermentation processes. Key areas include the nutrition and metabolism of wine yeast and lactic acid bacteria, analysis of grape musts, and automation of fermentation controls. He teaches the ETH MSc course Technology of Alcoholic Beverages and contributes wine-related lectures to this program.
Dr. Heidinger is actively engaged in scientific collaboration and student mentorship, emphasizing applied research at the intersection of microbiology and viticulture.
